Abstract: Compared to other starch plants, sago (Metroxylon sp) is one of the starch-plants with high carbohydrate content (± 85%). As a local plant, potential sago land in Province of Maluku in general is still very large. If this potential is developed properly it will be able to help answer the problem of food insecurity. By using multiple regression analysis, Determinant of demand sago as a local food in the Ambon city is influenced by the level of family income, the price of sago, rice as a substitute goods, ages, tastes and the family size. The coefficient of determination of the study of 0.707574, or 70.75 percent. This means that the ability of the model to explain the determinants of request sago as local food in the Ambon City is equal to 77.75 percent and the balance of 22:25% influenced by other factors beyond the variables examined in the study.
