Abstract:	The research was conducted to study the characteristic of chilling of fish by cubic ice of (5x5x5) cm in a cold box of (42x34x20) cm. Results of the research point out that refrigeration process will be stopped around 22oC in 25 minutes, 16oC in 25 minutes, and 11oC in 45 minutes, for cooling by 6, 12, and 18 cubics ice, respectively. Based on the rate of ice melting was developed practical graphics to correlate variation of time and keeping temperature with height of salt water in cold box and variation of amount of kubic ice and keeping temperatur with weighth of fish.
