| Abstract: | Background: reused heated palm oil produces many hazardous compounds which give adverse effect to human health. Objective: the purpose of this study was to prove that the administration of heated palm oil can cause hepatocytes damage and albumin serum level decrease in mouse. Method: this study used 38 male Mus musculus, Swiss derived. They were divided into 3 groups; 9 were the first negative control (K(-)1) by aquadest administration, 9 were the second negative control (K(-)2) by fresh palm oil administration, 20 were intervention (P) by 27-times heated palm oil administration. The dose of administration was 1 ml/100 gram body weight, every day for 14 days. Materials used were tofu, aquadest, fresh palm oil, 27-times heated palm oil, ether, and formalin 10%. The parameter of microscopic liver examination was the percentage degeneration of hepatocytes of each vision field by 100-times magnificence. Result: microscopic examination were normal hepatocytes for aquadest administration group, fatty degeneration for fresh palm oil administration group, fatty degeneration and central zone necrosis for 27-times heated palm oil administration group. Mann Whitney test proved that the severity level of hepatocytes degeneration among the three groups were different (p<0,05). The average value of albumin concentration in aquadest administration group was 3,3111 +- 0,2892 g/dl, fresh palm oil administration group was 3,4333 +- 0,2872 g/dl, and 27-times heated palm oil administration group was 3,3050 +- 0,3953 g/dl. One Way Anova test proved that albumin level among the three groups were not different (p>0,05). Conclusion: the administration of 27-times heated palm oil for 14 days can cause hepatocytes degeneration (p<0,05) and did not cause albumin serum level alteration in mouse (p>0,05). |
