Abstract: Background: Sago is one of traditional food items Maluku regions that have a high carbohydrate content. Maluku live in different types of sago in each habitat and consumed by local people. Several types of sago that live in the Moluccas and have high economic value include: Sago Tuni, Ihur, Molat, Duri Makanaru and Rattan. The purpose of this study was to analyze several types of corn consumed by the people of Maluku. The types of corn that will be examined are Tuni Sago, Sago and Sago Ihur Molat. Method: In measuring the carbohydrate content of several types of corn will be used to calculate the spectrophotometer and the absorbance values using linear regression formula to know the carbohydrate content. Results: Sago flour carbohydrate content of Tuni (Metroxylon rumphii) of 89.13%, Sago flour Ihur (Metroxylon sylvester) of 77.4% and Sago flour Molat (Metroxylon sagus Rottbol) of 88.6%. Conclusion: Further studies on tubuhan sago and any potential contained therein required, particularly corn starch in order to be a perfect product.
